To: Department of Health and Human Services Secretary Michael Leavitt Re: It's time for full disclosure of trans fat in food It is the responsibility of the Department of Health and Human Services - and the Food and Drug Administration in particular - to help Americans make smart food choices. In July 2003 the FDA took an important step by requiring that food manufacturers list artery-clogging trans fat on Nutrition Facts labels (by January 1, 2006). We applaud this rule as an important step in the right direction, but it is imperative that the FDA take further action to minimize trans fat in foods and in the American diet. Trans fat still lurks in foods such as pie crusts, microwave popcorn and doughnuts. Many restaurant foods have even higher levels, which they aren't even required to disclose. It's time for the FDA to fulfill its public health mission and help rid the food supply of unnecessary trans fat by:
